I grew up with a Nonna. So food was never a discussion. You eat. You eat more. You don’t ask questions. If you say you’re not hungry, Nonna looks at you like you’ve personally disappointed Italy.
I left home.
Madrid first. Nonna said, “Good. They eat late. You’ll survive.” Bogotá next. Big flavours. Big personalities. Nonna approved. “You need confidence there.” Then Panama. Long lunches. Very long. Too much sun, she said. Not enough vegetables. Now Dubai. When I told Nonna, she asked me, “Do they eat properly?” I said yes. People who understand quality. So this is how I cook now. The way she taught me. Italian food, done properly.
Yes, the Burj Khalifa is right in front of my terrace. Nonna doesn’t care about that. She only wants to know if you’ve finished your plate.
